Happy Mardi Gras/Shrove Tuesday! I’m just going out to eat with a friend though I plan to have Cajun food, I think. What are others doing?

    In my case, forgetting about it until it was too late!

    I only remembered when a post from Fredericton Cathedral came up on Facebook about their annual pancake supper, cooked and served by the gentlemen of the congregation - and very delicious. ❤️

    I am thankful to no longer be expected to go to church and eat pancakes that are sometimes raw in the middle and burned on the edge cooked by the youth group. Thankfully, my children are now adults.

    No pancakes here either, though we did have tacos for lunch, which are a bit pancake like.

    We had a pancake supper at our local church group. The pancakes were perfectly cooked by Mr Heavenly and we provided savoury and sweet accompaniments.

    I contemplated making pancakes, but there were two flour tortillas on top of the bread bin that needed eating, some leftover cooked leeks in the fridge, along with some cooked ham, and a little leftover enchilada sauce. I added some sweetcorn kernels to the leeks & ham, bulked up the sauce with mayonnaise and yoghurt and created leek, ham & corn enchiladas.
    They looked similar to the savoury filled pancakes that I have made in the past, and tasted pretty good.
    If I didn't have to tell Mr RoS what we were having he would not have known he wasn't eating pancakes.

    My Mardi Gras/Fat Tuesday was a taco Tuesday: a crispy chicken taco, a chile relleno, followed by a fond farewell to sweets with a small hot fudge sundae. It's going to be a long 40 days without sweet stuff but I will comfort myself with Tex-Mex cuisine.

    Not as delicious as some dishes mentioned above, but for nostalgia's sake I made myself a small spring onion/scallion pancake with a little toasted sesame oil, tamari and garlic to accompany a tossed salad, thinking too of the Chinese Year of the Fire-Horse.

    We wound up at a Chinese buffet for Chinese New Year, but I still have leftover gumbo from the two nights before in the fridge, plus some beignets.

    We managed pancakes for dinner last night. A couple each with cold salt beef and burger gherkins in, then the rest of the batter (plus a second batch...) as pud with sugar, lemon juice, and golden syrup.

    I may have to see if Mum has a recipe for Scotch pancakes (aka drop scones) in Gran's notebook...

    Not being a great fan of the Pancake, I refrained - but I have (in a sort of Lenten spirit) used up Stuff in the fridge that reached its use-by date yesterday.

    Today's Ash Wednesday lunch has therefore been STEAK n'CHIPS.
